  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained and rinsed
  • 1 cup cilantro, chopped
  • 1/2 cup red bell pepper, chopped or diced
  • 1/2 cup orange bell pepper, chopped or diced
  • 1/2 cup red onions, diced

Seasoning & Dressing

  • 1 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 cup sugar
  • 1/2 cup olive oil
  • 1/3 cup white wine vinegar
  • 1 tbsp fresh lime juice
  • 1/4 tsp garlic powder

Instructions

  1. Drain and rinse the beans: Drain the cans of black beans and black-eyed peas and rinse them thoroughly under cold water to remove excess sodium and starch.
  2. Drain, rinse and pat dry the corn: Similarly, drain the sweet corn and rinse it. Pat all the beans and corn dry with paper towels to prevent the salad from becoming too watery.
  3. Transfer to bowl: Combine the rinsed black beans, black-eyed peas, and sweet corn in a large mixing bowl as the base of the salad.
  4. Add the vegetables: Add the chopped cilantro, red bell pepper, orange bell pepper, and diced red onions to the bean and corn mixture for color, crunch, and flavor.
  5. Prepare the dressing and mix: In a separate bowl, whisk together chili powder, kosher salt, sugar, olive oil, white wine vinegar, fresh lime juice, and garlic powder until well blended. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  6. Serve and enjoy: Serve the Cowboy Caviar chilled or at room temperature as a dip with tortilla chips, a topping for grilled meats, or a side salad.
