Instructions

  1. Rinse the Rice: Rinse the jasmine rice in a fine mesh strainer under cold running water until the water runs clear. This removes excess starch and helps prevent the rice from becoming sticky.
  2. Cook the Coconut Mixture: In a medium saucepan, combine the full-fat coconut milk and water. Place over high heat and bring the liquid to a boil.
  3. Add Rice: Add the rinsed rice and salt to the boiling coconut mixture. Stir once to combine and bring the mixture back to a simmer.
  4. Simmer: Reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer gently for 15 to 20 minutes, or until all of the liquid has been absorbed by the rice.
  5. Rest: Remove the saucepan from heat but keep it covered. Let the rice rest undisturbed for 15 minutes to allow steam to finish cooking the rice and to achieve a fluffy texture.
  6. Fluff and Serve: Remove the lid and use a fork to gently fluff the rice before serving. Serve immediately as a side dish or transfer to an airtight container and refrigerate for up to 7 days.
