Ingredients

Scale

Yellow Cake Batter

  • 1 yellow boxed cake mix
  • Ingredients according to package (usually water, oil, and eggs)

Cinnamon Crumb Topping

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/3 cup sugar
  • 1 tbsp ground cinnamon
  • 1/4 tsp vanilla extract
  • 1 stick cold, unsalted butter

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and grease a bundt pan using coconut oil or your preferred nonstick cooking spray to ensure easy removal of the cake.
  2. Prepare cake batter: Mix the yellow cake mix according to the package instructions, which typically includes adding water, oil, and eggs, then set it aside.
  3. Make crumb topping: In a bowl, combine the flour, brown sugar, sugar, cinnamon, and vanilla extract. Cut the cold butter into small pieces and mix into the dry ingredients. Use your hands to squish the butter until the mixture forms a crumbly texture. Alternatively, use a pastry cutter if preferred.
  4. Layer the cake: Pour half of the prepared cake batter into the greased bundt pan. Sprinkle half of the crumb topping evenly over the batter.
  5. Add remaining batter and swirl: Pour the remaining cake batter on top of the crumb layer. Optionally, swirl the batter gently with a butter knife by making small circles once around the pan to lightly mix the topping within the batter.
  6. Add remaining topping: Evenly sprinkle the rest of the crumb topping over the top of the cake.
  7. Bake: Bake in the preheated oven for 30 to 40 minutes. Check doneness by inserting a toothpick into the center – it should come out clean.
  8. Cool and serve: Remove the cake from the oven and allow it to cool completely in the pan before unmolding, slicing, and enjoying.

Notes

  • If you prefer not to use your hands to blend the butter into the dry ingredients, a pastry cutter works perfectly.
  • Be sure to cool the cake completely in the pan to avoid breaking when removing.
  • For added flavor, you can sprinkle a little cinnamon sugar on top before baking.
  • This cake pairs wonderfully with coffee, tea, or a glass of milk.
