Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour (11% protein or more)
  • 1 cup powdered/icing sugar
  • 1 pinch salt*
  • ½ cup cocoa (unsweetened)

Wet Ingredients:

  • 1 cup butter (softened)*

Instructions

  1. Sift the Dry Ingredients: In a large bowl, sift together the flour, salt, and cocoa.
  2. Mix the Wet Ingredients: In a mixing bowl, beat the sugar and softened butter until creamy. Add the sifted dry ingredients and mix just until combined.
  3. Form the Dough: Transfer the dough onto a flat surface and gently knead it into a ball. Wrap the dough in plastic wrap and refrigerate for 60 minutes. Alternatively, roll the dough into a log shape, wrap in plastic, and refrigerate.
  4. Roll and Cut: Roll the chilled dough on a floured surface or between parchment paper to ½-inch thickness. Cut out shapes with cookie cutters or slice if using a log shape. Place the cookies on parchment paper-lined sheets and refrigerate while preheating the oven.
  5. Preheat and Bake: Preheat the oven to 320°F (160°C). Bake the cookies for 12-15 minutes until set. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!

Notes

  • You can decorate these cookies with melted chocolate, sprinkles, or a dusting of powdered sugar for added flair.
  • Ensure the butter is softened but not melted to achieve the right cookie texture.
  • Chilling the dough helps the cookies maintain their shape during baking.
