Delicious and easy-to-make Chocolate Peanut Butter Stacks combine buttery crackers with a creamy peanut butter and marshmallow filling, all dipped in rich melted chocolate and finished with festive sprinkles. Perfect for holiday gatherings or sweet snacking.

Ingredients

Scale

Crackers

  • 48 Ritz crackers or buttery golden round crackers

Filling

  • 1/2 cup creamy peanut butter
  • 1/2 cup marshmallow creme

Coating and Garnish

  • 1 pound chocolate, coarsely chopped and melted for dipping
  • Holiday sprinkles (optional but recommended)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment or wax paper to prevent sticking and ease cleanup.
  2. Arrange Crackers: Lay 24 crackers spaced evenly on the prepared baking sheet and set aside for filling.
  3. Make Filling: In a medium bowl, combine the creamy peanut butter with marshmallow creme, stirring until smooth and fully blended.
  4. Spread Filling: Evenly spread a thin, but not paper-thin, layer of the peanut butter and marshmallow mixture onto each of the 24 crackers on the baking sheet.
  5. Form Stacks: Top each filled cracker with one of the remaining 24 crackers to create sandwich-like stacks; set them aside on the baking sheet.
  6. Melt Chocolate: Place the chopped chocolate in a medium microwave-safe bowl and heat on high power in 15- to 30-second intervals, stirring after each burst, until the chocolate is fully melted and smooth.
  7. Dip Stacks: Using one or two forks, dip each peanut butter stack into the melted chocolate, allowing excess chocolate to drip off. Place the dipped stacks back onto the lined baking sheet.
  8. Add Sprinkles: While the chocolate is still wet, sprinkle holiday sprinkles on top to add a festive touch and extra texture.
  9. Chill: Refrigerate or freeze the baking sheet with the chocolate-dipped stacks until the chocolate hardens, then they are ready to serve and enjoy.

Notes

  • Use good quality chocolate for best flavor; semi-sweet or milk chocolate both work well.
  • Do not overheat chocolate to prevent burning; stir frequently during melting.
  • For easier dipping, use a fork or chocolate dipping tool to avoid messy hands.
  • You can substitute peanut butter with almond butter for a different twist.
  • Store leftover stacks in an airtight container in the refrigerator for up to a week.
