  • 170g smooth peanut butter
  • 2 tbsp coconut oil (omit if using runny peanut butter)
  • 60ml maple syrup
  • 80g cornflakes or crunchy cereal of choice
  • Pinch of salt

For the Coating

  • 150g dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Combine Ingredients: Add the peanut butter, coconut oil (if using), maple syrup, and a pinch of salt to a saucepan. Heat gently on a low flame until all ingredients soften and combine into a smooth mixture.
  2. Mix in Cornflakes: Remove from heat and fold in the cornflakes carefully until each flake is well coated with the peanut butter mixture.
  3. Shape the Bites: Divide the mixture evenly into your chosen moulds, such as small round molds, or press the mixture into a loaf tin lined with baking paper if making bars.
  4. Freeze to Set: Place the moulds or loaf tin in the freezer for about 2 hours or until firmly set. Once solid, remove from the molds or tin. If using a loaf tin, slice into bars.
  5. Melt Chocolate Coating: Break the dark chocolate into a heatproof bowl, add 1 tsp of coconut oil, and melt gently using a microwave in 10-second intervals or over a double boiler, stirring often to avoid burning.
  6. Dip and Chill: Dip each cornflake bite or bar into the melted chocolate, then arrange on a baking sheet lined with baking paper. Transfer to the fridge until the chocolate coating sets.
  7. Store and Serve: Store the chocolate-coated bites in an airtight container in the freezer. Remove 20 minutes before serving to soften slightly.

  • If your peanut butter is runny, omit the coconut oil to avoid excess oiliness.
  • You can substitute maple syrup with other liquid sweeteners such as honey or agave. For a lower calorie option, use a sugar-free liquid sweetener.
