  • 3 oz heavy whipping cream

  1. Prep Ramekins: Add 8 small ramekins or cups onto a sheet pan and set aside.
  2. Infuse Sugar and Orange Zest: Rub together the sugar and orange zest until fragrant.
  3. Simmer Cream Mixture: In a saucepan, simmer heavy cream and orange sugar, stirring frequently for 10 minutes.
  4. Add Orange Juice: Juice oranges to get ½ cup, then add to the cream mixture.
  5. Chill Posset: Divide the mixture into ramekins and chill for at least 4 hours.
  6. Prepare Chocolate Ganache: Heat cream and chocolate until smooth, then spoon over chilled posset.
