  • 2 cups whole milk

Choux Pastry:

  • ¾ cup salted butter
  • 1½ cups water
  • 1½ cups all-purpose flour
  • ½ teaspoon fine sea salt
  • 6 eggs room temperature

Chocolate Frosting:

  • ½ cup salted butter
  • 2 ½ cups powdered sugar
  • ¼ cup unsweetened cocoa powder
  • pinch fine sea salt
  • ½ teaspoon pure vanilla extract
  • ¼ cup whole milk

Instructions

  1. Make the Eclair Filling – Mix French vanilla pudding and milk. Whip cream, vanilla, and sugar until firm peaks. Fold pudding mixture into whipped cream. Refrigerate.
  2. Make the Choux Pastry – Prepare choux pastry, bake, and cool.
  3. Make the Chocolate Frosting – Beat butter, vanilla, salt, sugar, cocoa, and milk until fluffy.
  4. Assemble the Eclair Cake – Layer filling between choux pastry, top with chocolate frosting.
  5. Chill & Serve – Chill for at least 6 hours, then cut into squares to serve.
