Ingredients

Scale

For the Roll-Ups:

  • 9 lasagna noodles
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese (shredded, plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 cup Alfredo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

For the Topping:

  • 2 cups marinara sauce
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool, preventing them from sticking together.
  2. Prepare the Filling: In a mixing bowl, combine cooked chicken, ricotta cheese, 1 cup shredded mozzarella, Parmesan cheese, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Roll the Lasagna: Preheat your oven to 350°F (175°C). Spread about 1/4 cup of the chicken mixture onto each cooled lasagna noodle and roll it up tightly from one end to the other. Spread 1 cup of marinara sauce evenly on the bottom of a 9×13 inch baking dish, then arrange the roll-ups seam side down in the dish.
  4. Add Sauce and Cheese: Pour the remaining marinara sauce evenly over the arranged lasagna roll-ups. Sprinkle the remaining shredded mozzarella cheese on top for a deliciously cheesy finish.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  6. Serve: Remove from the oven and let it cool for a few minutes to set. Serve warm, optionally garnished with fresh herbs such as basil or parsley for added color and flavor.

Notes

  • Ensure noodles are completely cooled and laid flat to prevent tearing when rolling.
  • Use freshly grated Parmesan for best flavor.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
  • This recipe can be doubled and baked in a larger dish for more servings.
  • For a lighter version, use low-fat cheese and a reduced-fat Alfredo sauce.
