  1. Preheat and Roast Nuts: Preheat your oven to 180°C (356°F). Spread the pecan nuts on a baking tray lined with baking paper or a silicone mat, and roast them for about 8 to 10 minutes. Once roasted, allow them to cool slightly before proceeding.
  2. Prepare Sugar Syrup: In a medium flat pan or wide pot, combine the sugar and water. Bring the mixture to a boil, then immediately add all the roasted pecan nuts. Stir constantly using a wooden spoon or heat-proof silicone spatula to prevent burning.
  3. Caramelize the Nuts: Continue stirring as the sugar mixture starts to crystallize and turn white. Keep stirring until the sugar begins to caramelize and turns a golden caramel color, coating the nuts evenly. This process happens quickly once caramelization starts, so stay attentive.
  4. Add Flavorings and Cool: Remove the pan from heat. Quickly add the cinnamon powder, salt, and vanilla powder, mixing thoroughly to coat the nuts. Immediately pour the caramelized nuts onto a baking tray lined with baking paper, spreading them apart to prevent clumping. Allow to cool completely before storing.
  5. Optional Nut Butter: For a smooth and creamy caramelized pecan butter, blend the cooled caramelized nuts in a powerful food processor until smooth and spreadable.
