Ingredients

Scale

For the Skewers

  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini)
  • Fresh basil leaves
  • Salt and pepper, to taste
  • Skewers (6-inch or 8-inch)

For the Cranberry Glaze

  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon balsamic vinegar
  • Pinch of salt

Instructions

  1. Make the Cranberry Glaze: In a saucepan, combine the cranberries, sugar, water, and a pinch of salt. Bring the mixture to a boil over medium heat, then reduce heat and simmer for 10-15 minutes until the cranberries burst and the mixture thickens slightly. Stir in balsamic vinegar and remove from heat. Allow the glaze to cool completely before using.
  2. Assemble the Skewers: Rinse the cherry tomatoes and fresh basil leaves, and drain the mozzarella balls if they’re packed in water. Thread a cherry tomato, followed by a basil leaf, then a mozzarella ball onto each skewer. Repeat until the skewer is filled, leaving ends clear for handling. Lightly season the skewers with salt and pepper to taste.
  3. Drizzle with Glaze: Arrange the assembled skewers on a serving platter. Just before serving, drizzle the cooled cranberry glaze evenly over the skewers for a sweet and tangy finish.

Notes

  • The cranberry glaze can be prepared a day in advance and stored in the refrigerator until needed.
  • For added variety, try adding slices of avocado or prosciutto to the skewers.
  • Experiment with different herbs like mint or oregano for a unique flavor profile.
  • If short on time, substitute the homemade cranberry glaze with a store-bought balsamic glaze.
  • Store leftover skewers in an airtight container in the refrigerator for up to 2 days; keep the glaze separate until serving.
  • This recipe is naturally gluten-free.
