Buckeye Fudge is a rich, creamy treat that combines the flavors of peanut butter and chocolate into a smooth, melt-in-your-mouth dessert. This no-bake recipe is perfect for peanut butter lovers looking for a decadent homemade fudge with a hint of crunch from roasted peanuts and a silky chocolate topping.

Ingredients

Scale

Fudge Base

  • 3 cups peanut butter chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1/3 cup salted dry roasted peanuts, roughly chopped

Chocolate Topping

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Prepare the Pan: Line a 9×9-inch baking pan with foil and spray with cooking spray to ensure easy removal of the fudge later.
  2. Melt Peanut Butter Chips: In a large microwave-safe bowl, melt the peanut butter chips by microwaving in 1-minute increments, stirring after each minute until the mixture is smooth and fully melted.
  3. Combine Fudge Ingredients: Stir the melted peanut butter chips together with the sweetened condensed milk, creamy peanut butter, and roughly chopped salted dry roasted peanuts until well combined.
  4. Press Mixture into Pan: Evenly press the fudge mixture into the prepared baking pan. Then refrigerate for 1 hour to let it set firmly.
  5. Make Chocolate Ganache: In a small microwave-safe bowl, microwave the semisweet chocolate chips and heavy whipping cream together for 60 seconds, then stir until smooth. If the mixture is not smooth, microwave for an additional 30 seconds and stir again.
  6. Apply Chocolate Topping: Spread the smooth chocolate ganache evenly over the chilled fudge layer.
  7. Chill to Set: Refrigerate the fudge until the chocolate topping is fully set, preferably overnight for best results.
  8. Serve: Cut the fudge into 36 equal pieces. Store leftovers in an airtight container in the refrigerator.

Notes

  • Be sure to stir the chocolate ganache thoroughly after microwaving to avoid grainy texture.
  • You can substitute creamy peanut butter with natural peanut butter if preferred, but texture may slightly vary.
  • For a nut-free version, omit the chopped peanuts, but this will alter the texture.
  • If you don’t have a microwave, melt the peanut butter chips and chocolate topping using a double boiler on the stovetop.
  • Use fresh heavy whipping cream for the smoothest chocolate topping.
