Eggs
- 12 large free-range brown hard boiled eggs
Filling
- 1 cup Garlic and Fine Herbs Boursin Cheese
- 1/3 cup plain low-fat Greek yogurt (or creme fraiche, sour cream, or mayonnaise)
- 1/2 teaspoon sea salt
Topping
- 3–4 tablespoons ground crackers of choice for topping
- Prepare the cracker topping: Crush a few of your favorite crackers into small pieces and set them aside for garnishing the deviled eggs later.
- Boil the eggs: Place the eggs in a large pot and cover them with cool water by about an inch. Bring the water to a boil over medium heat.
- Cook the eggs: Once boiling, boil for 2-3 minutes, then turn off the heat, cover the pot with a lid, and let the eggs continue to cook in the hot water for 7-10 minutes.
- Cool the eggs: Drain the hot water and refill the pot with cold water. Let the eggs sit in the cold bath for 2-3 minutes to cool and stop further cooking.
- Peel and halve the eggs: Cut the hard boiled eggs in half lengthwise and carefully remove the yolks from the whites.
- Make the filling: In a bowl, combine the egg yolks, Boursin cheese, Greek yogurt, and sea salt. Blend together until creamy and smooth.
- Fill the egg whites: Spoon or pipe the creamy yolk mixture into the hollowed-out egg whites.
- Garnish and serve: Sprinkle the crushed crackers generously over the filled eggs for added texture and flavor before serving.
Notes
- For extra creaminess, you can substitute the Greek yogurt with creme fraiche, sour cream, or mayonnaise.
- Use gluten-free crackers if you want to make this recipe gluten-free.
- This recipe works well served chilled, so refrigerate the filled eggs for at least 15 minutes before serving.
- You can experiment with different flavored Boursin cheeses to customize the taste.
