Ingredients

Scale

Peaches:

  • 45 peaches, cored and cut into wedges (skin on)

Caramel:

  • 1 stick butter (8 tablespoons)
  • 1 1/4 cup sugar
  • 3 tablespoons bourbon

Cake Batter:

  • 3 eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven: Heat the oven to 350°F.
  2. Prepare the pan: Line a 9-inch cake pan with parchment paper and grease it.
  3. Arrange peaches: Place peach wedges over the parchment paper, starting from the center. Sprinkle with 1/4 teaspoon cinnamon.
  4. Make caramel: Combine water and sugar in a saucepan. Cook until light brown, then remove from heat. Add bourbon and pour over peaches.
  5. Prepare batter: Beat butter and sugar until fluffy. Add eggs, vanilla, and bourbon. Mix in flours, baking powder, and cinnamon.
  6. Pour batter: Spread the batter over the peaches in the pan.
  7. Bake: Bake for 30-35 minutes until a toothpick comes out clean.
  8. Cool and serve: Let the cake cool before flipping it out of the pan.

Notes

  • You can serve this cake warm with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
  • Make sure to let the cake cool slightly before flipping it to prevent the caramel from sticking to the pan.
