Instructions

  1. Prepare the Beef Filling: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary. Then add the chopped onion and minced garlic to the skillet and cook for about 3–4 minutes until the onion is translucent. Stir in chili powder, cumin, paprika, salt, and pepper. Add the black beans and corn if using, mix well, and cook for an additional 2–3 minutes. Remove from heat and stir in 1 cup of shredded cheese until melted and combined.
  2. Assemble the Enchiladas: Preheat the oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Take a tortilla, spoon a generous amount of the beef filling in the center, and roll it up tightly. Place seam-side down in the baking dish. Repeat with all tortillas and filling. Pour the remaining enchilada sauce evenly over the rolled enchiladas, then sprinkle with the remaining shredded cheese.
  3. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
