Bacon:

  • 4 slices thick-cut bacon

Broccoli Salad:

  • 1 pound broccoli (1 head), rinsed and cut into florets
  • 3/4 cup shredded cheddar
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt and fresh ground black pepper

Instructions

  1. Cook the bacon: Cook the bacon until crisp, then chop into small bits.
  2. Prepare the salad: In a large bowl, toss together broccoli, red onion, cheddar, jalapeño, and bacon.
