Salmon Meatballs
- 1 lb salmon fillet, skin removed and finely chopped
- 1/2 cup breadcrumbs
- 1 egg, lightly beaten
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil (for baking)
Avocado Sauce
- 1 ripe avocado
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- Prep Oven: Preheat your oven to 375°F (190°C) and grease a baking sheet with olive oil or nonstick spray to prevent sticking.
- Mix Meatballs: In a large mixing bowl, combine the finely chopped salmon, breadcrumbs, beaten egg, fresh parsley, garlic powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Form & Bake: Shape the salmon mixture into small meatballs approximately one tablespoon in size. Arrange them evenly on the prepared baking sheet, drizzle with olive oil, and bake for 12-15 minutes until the meatballs are firm and reach an internal temperature of 145°F (63°C).
- Make Sauce: While the meatballs bake, prepare the avocado sauce by blending together the ripe avocado, sour cream, lemon juice, minced garlic, salt, and pepper until smooth and creamy.
- Serve: Plate the warm salmon meatballs and drizzle generously with the creamy avocado sauce. Garnish with extra fresh parsley if desired for an added burst of flavor and color.
Notes
- Ensure the salmon is finely chopped to help the meatballs hold together well.
- Use fresh parsley for the best flavor, but dried can be substituted if needed.
- The avocado sauce can be adjusted for thickness by adding more sour cream or lemon juice as preferred.
- Checking the internal temperature of meatballs with a meat thermometer ensures they are safely cooked.
- These meatballs can also be cooked in a nonstick skillet over medium heat if an oven is not available, but baking is recommended for an even cook and less oil.
