Ingredients

Scale

Calzone Dough and Filling

  • pizza dough
  • 6 slices bacon, fried and chopped
  • ¼ cup olives, sliced
  • 4 large mushrooms, sliced and sautéed
  • 2 anchovies (optional)
  • 1 cup mozzarella cheese, shredded

Egg Wash

  • 1 egg (beaten)

Optional

  • Marinara sauce for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400℉ (204℃) to ensure it reaches the right temperature for baking the calzones evenly and to achieve a golden crust.
  2. Prepare Dough: Divide the pizza dough into two equal parts. Roll each half into a circle approximately 12 inches in diameter and about ⅛ inch thick, creating a thin base for your calzones.
  3. Add Fillings: On one half of each dough circle, evenly spread the shredded mozzarella cheese. Layer the chopped cooked bacon, sautéed mushrooms, and sliced olives on top of the cheese. If using anchovies, add them now. This builds the flavorful interior of your calzones.
  4. Form Calzones: Fold the other half of the dough over the filling, creating a semicircle. Seal the edges by rolling them up or pressing firmly with a fork. Use a little water along the edges if needed to help them stick and prevent filling from leaking during baking.
  5. Apply Egg Wash: Brush the surface of each calzone with the beaten egg. This will give the crust a beautiful golden-brown color and shine once baked.
  6. Bake: Place the calzones on a baking sheet and bake in the preheated oven for 20 to 25 minutes, or until they turn golden brown and the dough is cooked through.
  7. Serve: Remove the calzones from the oven and let them cool slightly. Serve warm with marinara sauce on the side for dipping if desired.

Notes

  • You can omit sautéing mushrooms and add them raw if you prefer a firmer texture, but sautéing brings out their flavor and reduces moisture.
  • Anchovies are optional; they add a salty umami flavor but can be left out for a milder taste.
  • Use fresh, good-quality pizza dough for the best texture and flavor.
  • Make sure to seal the edges well to prevent the filling from leaking during baking.
  • Marinara sauce is optional but highly recommended for dipping.
