For the Chicken Gyro:
- 1.32 pounds Boneless Chicken Thighs (or 600 gms)
- 2 tbsp Finely Chopped Garlic
- 2 tbsp Lemon Juice
- 1 tsp Black Peppercorns (black)
- 3/4 cup Extra Virgin Olive Oil
- 2 tbsp Paprika
- 2.5 tbsp dried rosemary
- 2.5 tbsp whole coriander seeds
- 2.5 tbsp red chili flakes
- Coarse sea salt to taste
- 1/2 large Onion
- 1 Bamboo Skewer
- How to Tenderize the meat & marinate it: Begin by pounding each chicken thigh with a meat mallet until 1/2″ or 1 cm thick. Repeat with all thighs. Set aside.
- How to prepare the Marinade & marinate the gyro meat: Grind spices, add garlic, olive oil, lemon juice. Coat chicken thighs. Marinate overnight.
- How to make the home-made vertical rotisserie: Create a skewer with an onion stump and bamboo skewer.
- How to skewer the meat & bake the chicken gyro: Skewer marinated chicken thighs, bake at 375 F for about 1 hour or until internal temperature reaches 165 F. Allow to cool, shave the meat, and serve with Tzatziki sauce.
