Ingredients

Scale

Apple Filling

  • 1 apple peeled and diced small
  • 13 g (1 tbsp) brown sugar
  • 1 tsp lemon juice
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp cornstarch
  • 1 tsp water

Scone Dough

  • 330 g (2 3/4 cups) all-purpose flour
  • 66 g (1/3 cup) granulated sugar
  • 1 ½ tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 113 g (1/2 cup) cold unsalted butter, cubed
  • 120 g (1/2 cup) half and half

Topping (Optional)

  • Raw sugar for topping
  • Additional half and half or milk for brushing

Instructions

  1. Prepare the Apple Filling: In a small pot, combine diced apple, brown sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat, stirring occasionally, until the mixture bubbles and the apples are tender, about 5-7 minutes.
  2. Thicken the Filling: Mix cornstarch with water to create a slurry and stir it into the apple mixture. Continue cooking until thickened, about 1-2 minutes. Remove from heat and let cool completely.
  3. Preheat Oven and Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside. Preheat your oven to 400°F (200°C) when ready to bake.
  4. Mix Dry Ingredients: In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, baking soda, and salt. Attach paddle to your stand mixer.
  5. Cut in Butter: Add cold cubed butter to the dry ingredients and mix on low speed until the butter pieces are about pea-sized, creating a crumbly texture.
  6. Add Wet Ingredients and Apple Filling: With mixer on low, gradually pour in half and half. Then fold in the cooled apple filling. Mix just until the dough comes together; avoid overmixing.
  7. Shape the Dough: Transfer dough to a lightly floured surface and form into a rectangle. Fold the dough onto itself to create layers, then shape it into an 8-inch (20 cm) diameter disc.
  8. Cut and Freeze: Cut the disc into 8 wedges (triangles) and place the wedges on the prepared baking sheet. Freeze the scones while you preheat the oven to help them retain shape and flakiness.
  9. Add Topping (Optional): If desired, brush the tops of the scones with half and half or milk and sprinkle with raw sugar for extra crunch and sweetness.
  10. Bake: Bake in the preheated oven for 18-20 minutes or until the scones are golden brown on top. Remove from oven and cool slightly before serving.

Notes

  • Folding the dough helps create flaky layers, so be gentle but thorough when shaping.
  • Freezing the scones before baking ensures they hold their shape and rise nicely.
  • Adjust sugar levels depending on your preference for sweetness.
  • These scones are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
  • Reheat gently before serving to restore their fresh-baked texture.
