Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for searing)

Filling

  • 1 honeycrisp apple, cored and thinly sliced
  • 1 wedge (about 3 ounces) brie cheese, sliced

Glaze

  • 2 tablespoons pure maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon dried thyme
  • 1 garlic clove, minced

Instructions

  1. Prepare the glaze: In a small bowl, whisk together maple syrup, Dijon mustard, dried thyme, and minced garlic until well combined. Set aside to let the flavors meld.
  2. Preheat the oven: Set your oven to 400°F (200°C) to get it ready for baking the stuffed chicken breasts.
  3. Prepare the chicken: Place the chicken breasts flat on a cutting board and carefully slice a pocket horizontally into each breast about ¾ of the way through. Season both sides generously with salt and pepper.
  4. Sear the chicken: Heat a large cast iron skillet over medium-high heat and add olive oil. Once hot, add the chicken breasts and sear for 2-3 minutes on each side until golden brown. Remove from the pan.
  5. Stuff the chicken: Carefully fill each chicken pocket with sliced honeycrisp apples and brie cheese. Use toothpicks to secure the openings if desired to prevent filling from spilling out during cooking.
  6. Glaze and bake: Place the stuffed chicken breasts back into the skillet. Brush the prepared maple-Dijon glaze generously over the top of each breast. Transfer the skillet to the preheated oven and bake for 20-22 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Serve: Remove from the oven, let rest for a couple of minutes, then serve immediately while warm, enjoying the delicious balance of sweet apple and creamy brie with tender chicken.

Notes

  • You can substitute honeycrisp apples with Granny Smith or Fuji apples for a different flavor profile.
  • If brie rind is not preferred, you can carefully remove it before slicing and stuffing.
  • To ensure even cooking, pound the chicken breasts slightly to an even thickness before slicing the pocket.
  • Use toothpicks to secure the chicken pockets to avoid filling leakage during cooking.
  • Leftover stuffed chicken breasts can be stored in an airtight container in the refrigerator for up to 2 days.
