Alice Springs Chicken is a flavorful and hearty dish inspired by the famous Outback Steakhouse recipe. It features tender grilled chicken breasts marinated in a honey mustard dressing and seasoned with garlic, onion powder, and paprika. The chicken is topped with crispy bacon and a blend of melted Monterey Jack and cheddar cheeses, then baked until bubbly and delicious. This recipe is perfect for a satisfying family dinner or special occasion meal.

Ingredients

Scale

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey mustard dressing (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste

Toppings

  • 8 slices of bacon
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Marinate the Chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch. In a large bowl, mix the honey mustard dressing, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts and coat them thoroughly. Let them marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  2. Cook the Bacon: Heat a skillet over medium heat. Cook the bacon slices until crispy, then transfer them to paper towels to drain excess grease. Once cooled, chop the bacon into small pieces.
  3. Cook the Chicken: Preheat the oven to 350°F (175°C). Using the same skillet used for the bacon, add a little oil if needed and heat over medium-high heat. Sear the marinated chicken breasts for about 4-5 minutes on each side until golden brown. Then transfer the chicken breasts to a greased baking dish.
  4. Assemble and Bake: Top each chicken breast with chopped bacon, shredded Monterey Jack cheese, and shredded cheddar cheese. Bake the chicken in the preheated oven for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted and bubbly.
  5. Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley. Serve with your favorite sides such as mashed potatoes, steamed vegetables, or a fresh salad for a complete meal.

Notes

  • You can marinate the chicken up to a day in advance to enhance flavor.
  • For a smoky flavor, grill the chicken instead of searing it on the stovetop.
  • Try different cheeses such as pepper jack or Swiss for varied flavor profiles.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
  • Chicken thighs can be used instead of breasts for a juicier option.
  • Add cayenne pepper or hot sauce to the marinade to spice the dish up.
