Chicken:

Coating:

  • 1 cup seasoned Panko bread crumbs
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Other:

  • Olive oil spray
  • Fresh parsley (finely chopped, for garnish)

Instructions

  1. Preheat the air fryer: Preheat the air fryer to 390 degrees F.
  2. Prepare the chicken: Cut chicken breasts in half to make four thin breasts. Pound each piece to an even thickness between plastic wrap with a meat tenderizer.
  3. Make garlic mayo: Mix mayo and minced garlic in a bowl. Spread this mixture evenly on the chicken breasts.
  4. Coat the chicken: In a shallow bowl, combine Panko bread crumbs, Parmesan cheese, salt, and pepper. Press each chicken breast into the mixture, coating both sides.
