  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 34 tablespoons cold water

Instructions

  1. Prepare the Filling: In a large skillet, sauté onion, carrots, and celery. Add garlic, thyme, bay leaf. Brown chicken, sprinkle with flour, pour in stock, and add peas and cream. Cook until thickened.
  2. Prepare the Pastry: Mix flour and salt, rub in butter, add water to form dough. Chill, then roll out.
  3. Assemble the Pie: Cover filling with pastry, trim and crimp edges. Make slits, brush with egg, and bake at 400°F (200°C) for 25-30 minutes.
