For the Filling:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
- 2 tablespoons all-purpose flour
- 1 cup chicken stock
- 1/2 cup frozen peas
- 1/4 cup heavy cream
For the Pastry:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small cubes
- 3–4 tablespoons cold water
- Prepare the Filling: In a large skillet, sauté onion, carrots, and celery. Add garlic, thyme, bay leaf. Brown chicken, sprinkle with flour, pour in stock, and add peas and cream. Cook until thickened.
- Prepare the Pastry: Mix flour and salt, rub in butter, add water to form dough. Chill, then roll out.
- Assemble the Pie: Cover filling with pastry, trim and crimp edges. Make slits, brush with egg, and bake at 400°F (200°C) for 25-30 minutes.
