Ingredients

Scale

Wet Ingredients:

  • 1/2 cup natural drippy peanut butter (or almond butter as a substitute)
  • 1/4 cup honey (or date syrup/coconut syrup)
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1/3 cup protein powder of choice
  • 1/3 cup flaxseed meal
  • 1/2 cup rolled oats (gluten-free if preferred)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon chia seeds
  • 1 tablespoon mini chocolate chips (vegan if preferred)
  • Optional: 1/4 cup unsweetened shredded coconut

Instructions

  1. Combine Wet Ingredients: In a food processor, mix peanut butter, honey, vanilla extract, protein powder, flaxseed meal, oats, cinnamon, and chia seeds until well combined.
  2. Add Chocolate Chips: Incorporate chocolate chips (and shredded coconut if desired) into the mixture and pulse a few more times.
  3. Form Energy Bites: Shape the dough into approximately 10 bite-sized balls using a medium cookie scoop or your hands. Place them in an airtight container.
  4. No Food Processor: If a food processor is not available, mix wet ingredients in a bowl, add dry ingredients, and combine. Adjust consistency by adding more nut butter or sweetener if needed.
  5. Storage: Store the energy bites in the fridge for up to one week or freeze for up to two months. Enjoy!

Notes

  • Feel free to customize these energy bites by adding your favorite mix-ins such as nuts, dried fruits, or seeds.
  • For a stronger coconut flavor, toast the shredded coconut before adding it to the mixture.
