For the Enchiladas:

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 8 (8-inch) flour tortillas
  • 1 (8-ounce) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican

For the Sauce:

  • 1 (10-ounce) can red enchilada sauce

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Brown the Beef: In a large skillet, brown the ground beef over medium-high heat. Drain the excess fat and return the meat to the skillet over medium-low heat. Stir in the salsa and cook until heated through. Remove from heat.
  3. Layer the Dish: Pour half of the enchilada sauce into the baking dish. Warm the tortillas, add meat and cheese, roll them up, and place them seam side down in the dish. Pour the remaining sauce over the enchiladas and sprinkle with the remaining cheese.
  4. Bake: Cover the dish with foil and bake for 30-35 minutes.
