For the Mac and Cheese Balls:
- 2 cups leftover mac and cheese
- 2 cups shredded cheddar cheese
- 2 eggs, beaten
- 2 cups breadcrumbs
For the Breading:
- 1 cup all-purpose flour
- 1/4 cup milk
For Frying:
- Vegetable oil
- Salt and pepper to taste
- Shape the Mac and Cheese: Take your leftover mac and cheese and shape it into small balls, about the size of a golf ball.
- Prepare the Breading Station: In three separate bowls, set up your breading station: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs.
- Bread the Balls: Roll each mac and cheese ball first in flour, then dip in the egg mixture, and finally roll in breadcrumbs until fully coated. Repeat with all the balls.
- Fry the Balls: Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Fry the balls in batches for 3-4 minutes, or until golden and crispy on the outside.
