This Healthy Tomato Zucchini Pasta is a delicious and nutritious dish that combines the flavors of fresh vegetables with pasta for a satisfying meal.

Zucchini Pasta:

  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz (220g) pasta (we used fusilli)

Seasoning and Garnish:

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 cup vegetable stock
  • 1/2 teaspoon Cayenne pepper, optional
  • 1 cup grated parmesan
  • Fresh basil or Parsley
  • 1/2 teaspoon Peper chili flakes (optional)

Instructions

  1. Cook the Pasta: Cook pasta al dente in a pot of boiling water according to package directions.
  2. Sauté Zucchini: Sauté diced zucchini in olive oil until golden, then set aside.
  3. Cook Tomatoes: In the same skillet, cook cherry tomatoes with seasonings until blistered.
  4. Combine Ingredients: Add zucchini, cooked pasta, and parmesan to the skillet. Reheat and mix well.
  5. Serve: Drizzle with olive oil, sprinkle with more parmesan, and enjoy!
